Twix Thumbprint Cookies!

Today I decided to make these cute and sweet Twix Thumbprint Cookies! I saw these on Instagram and knew I had to try making them. It was fairly simple, but the results looked delicious :) There weren't many modifications that I needed to make, however, I did end up only using 22 caramels for the filling as I had bought a smaller package. This didn't seem to affect the results too much, but there wasn't any leftover, so if you plan on making more cookies then try to use the full amount described in the recipe. As for the chocolate drizzle, I used about 1/2 cup of melted semi-sweet chocolate chips melted in the microwave for 1.5 minutes with 2 tsps of vegetable shortening.


As I find adding the shortening helps to stabilize the chocolate for a glossier finish that hardens faster than just using melted chocolate. Also, I heated up the chocolate chips in increments of 30 seconds, as the chocolate will burn if you do it all at once. I also let them cool for about 15min and they took about 12-14 min to bake at 350F and made 17 cookies in total. After drizzling the chocolate on top I placed them in the fridge on a baking sheet for the chocolate to fully harden for a finished look. Overall, this recipe turned out really well and I hope you have fun baking :)

Espresso Caramel Cookies!

Today I decided to make these delicious gooey Espresso Caramel Cookies! Not only do they have the gooey caramel centre and espresso caffeine, they also have chocolate chips for an added dimension! This recipe was a lot of fun to make and the brown butter made these cookies smell amazing even before baking them! To cut down on sweetness you could also add flaky sea salt on top, but I didn't have any on hand. This recipe made 9 regular sized cookies or 6 large cookies depending on your preference. It took approximately 12 minutes to bake at 350F. For the espresso powder, I just used regular espresso and then ground it finely into a powder. Overall, I hope you enjoy making these cookies and you'll keep wanting more - 'it's that me espresso' :)

Brown Butter Banana Coffee Cake Cookies!

Today I decided to make these Brown Butter Banana Coffee Cake Cookies! These cookies are even better with a cup of coffee or tea in the morning. It's also a great homage to Gilmore Girls, so it's a great recipe to save for re-watching the show in the fall. I love how easy it was to make them and all of the different textures and flavours. From the cream cheese chips, banana, brown butter, vanilla bean, and graham crackers. There weren't too many modifications that I needed to make, however, for the vanilla bean paste I simply used 2 vanilla beans, as I didn't have anymore left at home and that seemed to suffice. As for the frosting, I used approximately 50g of icing sugar and would recommend using a hand mixer or melting down the cream cheese first for a smooth consistency. Overall, this recipe made 18 regular sized cookies in total at 350F for 14min. Happy baking :)

Chocolate Covered Strawberry Muffins!

Today I decided to make these delicious Chocolate Covered Strawberry Muffins! A friend recommended the idea awhile ago and I happened to have lots of strawberries, so what better way to celebrate than to make them into muffins :) This recipe was fairly easy to make and there weren't many modifications needed. However, you could swap the chocolate for white chocolate chips or caramel chips for a different flavour. In total this recipe made 12 regular sized muffins and took 5min at 425F and 17min at 350F. I would also recommend letting them cool on a cooling rack for about 5-10min before drizzling chocolate on top. Also, consider adding 1tsp of shortening to the chocolate drizzle to make its appearance glossier and easier to use. I also used a ziplock bag to put the chocolate in and cut a tiny corner with scissors to create an even drizzle. Overall, I hope you enjoyed this review and have fun baking :)

Banana Chocolate Chip Streusel Muffins!

Today I decided to make these flavourful Banana Chocolate Chip Streusel Muffins! Perfect with a cold glass of milk for a snack or dessert. I loved how easy they were to make and the simplicity of it all. There weren't many modifications that I needed to make, however, I did find the streusel portion to create almost twice as much as I needed. So for next time, I would probably use about half of the recipe. In total, this recipe made 12 regular sized muffins and took about 25min to bake at 350F. I almost opted for adding in some blueberries to the mix, which I think would complement the flavours quite well with maybe reducing the chocolate chips in half and using the remainder for blueberries. Overall, I had a lot of fun making them and I hope you do too! Happy baking :)
