Almond Frangipane Blondies!

Today I decided to make these delicious Almond Frangipane Blondies! Perfect on a sunny patio day and tastes even better with a hot cup of coffee of tea. I love how these taste just like the middle of an almond croissant. They were fairly simple to make and there weren't too many unusual ingredients that you needed to add, which I appreciated. If you're looking for vanilla beans, you can easily find them at your local Costco and the prices are slightly cheaper compared to your average grocery store. I would also recommend waiting until the blondies have fully cooled before sprinkling on the icing sugar. In total, it made 16 blondies and took about 35min to bake at 350F. Dried Cherry and White Chocolate Chip Scones!

Today I decided to make these sweet Dried Cherry and White Chocolate Chip Scones! these had a slight modification as I added 1/3 cup of white chocolate chips to the recipe for a bit of twist. I came up with the idea as I had leftover dried cherries and I find that white chocolate compliments the flavour of cherries quite well. In total, this recipe recipe made 8 scones if you make it into a round cut into triangles. However, you could also roll them into round scones depending on your preference. I also made my own buttermilk since I didn't have any on hand by adding 1.5tsps of lemon juice to 1/2 cup of milk. It took approximately 17min to bake at 400F for all 8 scones. Overall, I found this to be a nice addition to my repertoire of scone recipes, happy baking :)

Matcha Strawberry White Chocolate Chip Cookies!

Today I was inspired to make a matcha dessert and found this recipe for Matcha Strawberry White Chocolate Chip Cookies! Normally, this recipe only has white chocolate chips but I added some sliced strawberries (3-4 large strawberries), as I saw someone add them to their matcha cookies on TikTok and thought it was a great idea. I also ended up having to add about 3/4 cup extra flour, as I found the dough was a bit wet. I then baked them for approximately 14min at 350F and this recipe made 12 large cookies in total. Overall, I found this recipe worked out fairly well, however, I would like to try another variation of a matcha cookie, as it was a bit wet. Hope you have fun baking this week!

Copycat Crumbl Birthday Cake Cookies!

Today I decided to make some birthday celebratory cookies with these Copycat Crumbl Birthday Cake Cookies, which is also great timing given that a Crumbl Cookies location just opened nearby in Coquitlam. The first Canadian location for Crumbl Cookies! I love how simple these were to make, however, there were some modifications. For instance, I used a mixture of vanilla extract and almond extract instead of cake batter extract simply because I didn't have any on hand. This recipe made 12 cookies in total and took about 16min to bake at 350F. I also added 1.5 cups of icing sugar to the frosting as I found the frosting was a bit too runny. I also added almond extract to the frosting instead of cake batter extract as well. Also, make sure to fully let the cookies cool before frosting by placing them on a cooling rack.
