Lemon Blossom Cupcakes with Lemon Buttercream & Cream Cheese Frosting!

Recently, I finished reading the book, "Kiss My Cupcake" by Helena Hunting and I got inspired to make cupcakes. In the novel, the protagonist, Blaire, makes Lemon Cupcakes with Lemon Buttercream Frosting, so I thought I'd make some in tribute to the book. The character also makes them with a lemon curd filling, but I thought these would be lemony enough without it and sprinkled some lemon zest on top of each cupcake on top.


Initially, I made a batch of lemon cream cheese frosting, but it only made a small amount proportionate to the amount of cupcakes it made, so I thought I'd make buttercream for the second frosting round. The recipe made 12 regular-sized cupcakes, as well as 24 mini cupcakes and took 18 min in the oven at 350F for both batches. For the lemon buttercream frosting, I used the recipe below and then added 1/4 cup of lemon zest to make it lemony.


In terms of modifications, I would recommend making sure that both the cream cheese and butter is cold when making the cream cheese frosting, as I found it was a bit difficult to get the right consistency when I used them at room temperature. Overall, this recipe turned out fairly well, however, I found the buttercream frosting to work out better than the cream cheese frosting, so keep that in mind if you do end up making these cupcakes.
