Lemon Poppy Seed Madeleines!

Today I decided to make these delicious and refreshing Lemon Poppy Seed Madeleines! Making them was fairly simple especially if you have a madeleine pan, which you can buy at your local Cooking/Baking Supply store, Winners/Marshalls, or on Amazon. In terms of making the madeleines, here are a few tips / alterations that I found really helped me while making them.


For one, I've attached the YouTube video found below to help me determine the right batter consistency, as well as when to fold in each ingredient and how much batter to spoon in to each cavity. Make sure to use a whisk, as this will be the only way that you can get the egg mixture to become aerated and foamy. Also, instead of adding all of the ingredients in step two at once, I would separate them like in the video to be: 1) sugar, eggs, and egg white 2) zest and lemon juice.


As for cooling down the melted butter, I found it took a while to let it cool, so I put a gel ice pack (refrigerated not in the freezer, otherwise it will coagulate too quickly) underneath the melted butter bowl for a few minutes to cool it enough to add to your mixture.


In terms of preparing the madeleine pan, I used a pastry brush to brush each cavity with the melted butter and then sprinkled some flour on top before adding the batter to ensure it was easy to take out. From there, it took about 15 minutes and made 12 madeleines, however, next time I would separate it out and make 15 madeleines, as some of them were a bit too full.


Once they're ready, let them cool for about 5-10 minutes with the option of creating a lemon glaze. I used this on a few of them, the recipe is as follows: 1 cup of sifted icing sugar, 1 tbsp of lemon juice, and 1/2 tbsp of milk. Mix all of the ingredients together. Adjust as needed (add more icing sugar if it's too watery and add more milk/lemon juice if it's too thick). Overall, the madeleines were a success and I hope you enjoyed this review!
