Lofthouse Copycat Cookies!

Happy Tuesday! Today I decided to make these cute and colourful Lofthouse Copycat Cookies! These taste great with a cup of coffee or tea and are even better as an afternoon pick-me-up treat. One modification that I did need to make was by adding approximately 1/3 cup of icing sugar to the frosting, as it was a bit thin. As well as using a frosting knife to spread frosting on top rather than using a piping bag, as the consistency wasn't quite what would be needed to create a nice finish on top. Making these cookies was fairly easy and I love how bright the frosting colour turned out. Especially since cookies can appear a bit bland sometimes, so frosting is definitely the way to go! This recipe ended up making 20 cookies and took approximately 10 min to bake at 350F. Overall, this recipe turned out really well and I hope you have a pink-tastic day! Happy baking :)
