Today I was reading a book called, "Letters to the Lost" by Brigid Kemmerer, when the protagonist, Juliet, is offered a pecan pie cookie. Instantly intrigued I decided to look it up to see if there was such a thing and lo and behold, there is! Naturally, after looking it up I found out the actual term for these cookies are pecan tassies and I knew I needed to make them. Making these cookies was fairly simple and was basically a cookie cup filled with pecan pie filling to make these mini pecan pies.
In terms of modifications there wasn't much I needed to change; however, I would recommend greasing the muffin tin cavities with butter, margarine, or oil and then shaking some flour around the inside of the pan to prevent the cookies from sticking too much. In terms of baking time it took 25 minutes and made 24 mini cookies. Another addition you could make would be to melt some chocolate chips in the microwave and then drizzle the melted chocolate in a zig-zag fashion over the top of each cookie. Or you could also make a caramel drizzle to put on top.
Overall, this recipe turned out really well and I'm so glad to have found out about this gem of a cookie through reading a book of all places!
