Blueberry Cream Cheese Cookies!

Today I decided to make these delicious Blueberry Cream Cheese Cookies! Perfect for the start of spring and delicious with a cold glass of milk or hot cup of coffee. Making these cookies was fairly simple and there weren't many modifications I needed to make. However, I did end up baking them slightly longer at 18min for 350F and in total the recipe made 15 cookies. I would also recommend waiting 10-15min before drizzling the lemon glaze on top, and also consider adding 1/4 cup of icing sugar to make it a bit thicker. You could also add white chocolate chips to the mixture for more texture and sweetness. Overall, I really enjoyed making these cookies and I hope you do too. Happy baking :)

Strawberry Brownies!

Today I decided to make these cute Strawberry Brownies with a Vanilla Glaze! A very spring dessert that tastes even better when paired with a cup of coffee or tea :) There weren't too many modifications I made, however, I did opt out of the strawberry extract as I didn't have any on hand and added a few extra drops of red food colouring to make it more pink. Something to keep in mind is that it will take 20min to reduce the strawberries into 1/4 cup, while simmering on the stove. Also, as a side note, if you're wondering how much 1lb of strawberries is in grams it's about 1 clamshell or 454g. It takes approximately 35min to bake at 325F and 15min to cool. Strawberry Jam Cookies!

Today I decided to make these adorable Strawberry Jam Cookies! One thing to keep in mind is that they do need to be in the fridge for about 2.5hrs before baking, so if you're short on time this is good to note. I also used store bought jam instead of making my own for time management purposes and I found this worked just as well. In addition, I used regular AP flour plus arrowroot starch instead of gluten-free flour and cornstarch simply because I didn't have any on hand. In total, this recipe made # cookies and took # min to bake at 325F. Overall, this recipe was a lot of fun to make and I hope you like them too. Happy baking :)

Blueberry Cheesecake Streusel Muffins!

Today I decided to make these cute and delicious Blueberry Cheesecake Streusel Muffins. I love how easy they were to make and how complete with every component of a blueberry cheesecake in a small muffin form :) There weren't many modifications I had to make, however, you could always opt for a different fruit if you prefer something else such as strawberry, raspberry, or blackberry, or even consider adding in chocolate chips as a flavour. You could also make a graham cracker bottom to make it more like a cheesecake as an idea. In total, this recipe made 15 regular sized muffins and took 32 min to bake at 375F. One tip I would recommend if you don't have a hand mixer and are mixing the cream cheese mixture by hand, try warming it up in the microwave for about 30-45sec prior to stirring or leaving it on the counter for about 30min prior to mixing and it's a lot easier this way. Overall, I had a lot of fun baking them and I hope you do too! Have fun baking :)
