Mini Banana Bundt Cakes with Cream Cheese Frosting!

Today I decided to make another variation on a banana dessert by making these cute and fluffy Mini Banana Bundt Cakes with Cream Cheese Frosting. In terms of modifications, I used best brown sugar instead of light brown sugar and I made my own buttermilk with a combination of 1 cup 2% milk and 1 tbsp of lemon juice. As for the frosting, I used 1-1/4 cup of icing sugar instead of 1-1/2 cups, but this is up to you based on your sweetness preference, as well as your preferred icing consistency.


In terms of baking time, it took 30 min at 350F and I placed the mini bundt pans into a larger baking sheet, so that it would be easier to take out of the oven. I also buttered and floured each bundt pan to make it easier to take out after it was done baking. This recipe made 5 mini bundt cakes in total, but you could also make it into 6 mini bundt cakes by filling the pans two-thirds, as the cakes will rise a fair amount. This would allow the cakes to have a flatter base and make it easier to serve. The solution to this would be to either cut off the bottom and flatten it with a bread knife, turning it into a giant cupcake by keeping it bottom side up, or leaving it as is. If you do plan on cutting off the bottom of the bundt cakes, you can always use the remainder cake portions to add to frosting to turn it into cake pops.


Also, you could use a chocolate ganache or melted chocolate/white chocolate to pour on top if you're not a fan of cream cheese frosting or don't have it on hand at home. In addition, you could top it with your walnuts, pecans, berries, etc. Overall, this recipe turned out really well and was fairly easy to make. Enjoy and I hope you have fun baking :)
