Today I decided to make these cute and delicious Mini Blueberry Lemon Baked Donuts dipped in a Lemon Glaze. In terms of alterations, there weren't many I had to make; however, some include using oat milk instead of cow milk, simply because I didn't have any on hand. You could also substitute the milk for your favourite milk such as almond, cashew, soy, etc. I also excluded lemon zest since I didn't have any lemons, but I did have fresh lemon juice that was squeezed earlier that day. In addition, I used 1/2 cup of fresh blueberries to add it to the donut mixture. In total, this recipe made 12 mini donuts and took 10 minutes to bake at 350F. As for the lemon glaze, I used the same one as I had some leftover from my last review of the Blueberry Shortcakes. The recipe was fairly similar in combining: 1 cup icing sugar, 2 tbsps oat milk, and 1 tbsp lemon juice. Overall, this recipe turned out really well and I hope you enjoyed this quick and easy review!
