Mini Strawberry Pies!

Writer's picture: Lauren TangLauren Tang

Today I decided to make these cute and delicious Mini Strawberry Pies! These were a lot of fun to make and were a unique twist on the mini apple pies I previously made, as it uses the same pie crust recipe. However, I did use the strawberry filling recipe from a different recipe, which worked out fairly well.

Although, I do think it was bit runnier than I would've hoped for, so I would definitely increase the amount of cornstarch used in the recipe. I also would let the pies cool for 15-20min before taking them out of the muffin pan, as they are a bit liquidy. As for the pie crust recipe, I did end up having to make two batches of the recipe, one for the pie crust bottom and one for the lattice on top.

I also used a beaten egg to wash on top of each pie and sprinkled the tops with sugar to create a crunchy top. This recipe ended up making 12 mini pies and took 18 min to bake at 425F. Overall, this recipe turned out fairly well and I hope you enjoyed this review! Happy baking :)
