Mint Chocolate Chip Cookies!

Writer's picture: Lauren TangLauren Tang

Happy Saint Patrick's Day! To celebrate I decided to make these delicious Mint Chocolate Chip Cookies! Perfect to satisfy all of your mint and chocolate dreams, let them wait no more. They were so delicious in fact that as soon as I stepped away for a moment, two cookies were already gone (I'm looking at you mom and dad!)! Oh well, at least that means they must have tasted/smelled good!

Important PSA: Also in exciting news, last week I just created my first ever official 'Baking with Lauren' YouTube channel! Yay! Make sure to like and subscribe to my channel for more baking video content. You can check it out at: youtube.com/channel/

I'll also add the YouTube link down below. Thank you so much to those of you who have been following my blog over these past six years, I really appreciate all of your support! Now, back on to the cookies :)

These cookies were fairly straightforward to make with a few modifications. For instance, I used green gel food colouring and added it using about 3 toothpicks of food colouring to add to the cookie dough. (Just to clarify, don't add the toothpicks to the cookie dough, just the food colouring! I know this is probably fairly clear, but just wanted to make sure.)

Also, I used 3/4 cup of chocolate chips instead of 1 cup, however, I think I might use 1/2 cup next time instead, as there were a lot of chocolate chips left over. The recipe made 22 cookies and took 13 minutes to bake, which reminds me of Taylor Swift's song '22' haha. Also, while the recipe calls for freezing them for 1hr, I think you would only need 30 minutes and you could probably also put them in the fridge instead, as I found they became a bit too hard and didn't flatten much while baking.

Another modification you could make would be to use mint chocolate chips or a combination of both (1/4 cup of mint chocolate chips and 1/4 of chocolate chips). You could also use crumbled oreos or chocolate cookies instead of chocolate chips or white chocolate chips for a pop of colour! The options are endless! Anyways, beyond that this recipe was fairly simple and I hope you enjoyed this review! Have fun baking :)
