Today I decided to make a special dessert to celebrate Halloween on Sunday :) To do this, I made these delicious Mummy Macarons with Vanilla Buttercream Frosting and drizzled with melted white chocolate. A few modifications I made to this recipe include excluding the vanilla extract from the macarons to prevent the colour of the macarons changing.
Also, I ended up baking them for 17 minutes rather than 15 minutes, as I found it wasn't quite ready yet. In addition, I let them sit on the counter for 1hr before baking them and this seemed to be enough time to dry them out. This recipe made 14 cookie/macarons, but 7 macarons put together in total. In terms of cooling time, it took about 30min to fully cool.
As for the vanilla frosting, I ended up having to use an extra half cup of icing sugar, as I found it was a bit too buttery based on the current measurements. I also ended up melting the white chocolate using a hot water bath to place the bowl of white chocolate in and added about 1.5 tbsps of shortening to create a smooth and silky coating.
After drizzling the white chocolate, I then added the candy eyes on top and put the macarons in the fridge for 10 minutes to solidify the chocolate. As for eating, make sure to put them in the fridge overnight and eat them the next day for the best results. Happy Halloween and I hope you enjoyed this review :)
