Today I decided to celebrate the new year with these cute and sweet New Year's Day Fortune Cookies! 2020 has been a long and difficult year for many with lots of reflection and contemplation, so I thought it would be fitting to bring in the new year with some positive fortune cookie messages! To make these, I started off by writing out the fortune cookie messages with a fine liner and adding a pink heart to each one. I made 40 messages, but only ended up needing 20. The recipe for the batter turned out fairly well, however, the texture is more similar to a sugar cookie than your typical fortune cookie, so keep this in mind.
Also, the cookies took about 10 minutes to bake and it was a delicate balance between undercooking and overcooking the cookies, so keep an eye on them while they're in the oven. I would recommend only making 3 or 4 cookies at a time, I initially tried to make 5, but the cookies simply cool too fast for this to work. Also, consider using a pair of gloves or heat proof gloves while molding the cookies into shape, as I ended up burning my finger while doing this as a result.
An additional step I ended up doing was melting white candy melts in the microwave to dip half of the cookie in once they had cooled and then adding some sprinkles on top while they cool. If the candy melts won't create a smooth consistency consider adding some vegetable shortening rather than heating it up longer in the microwave, as the candy melts will start to burn at the bottom of the bowl otherwise.
The candy melts will dry faster than chocolate, which was why I used them instead of chocolate. However, if you would prefer to use chocolate then make sure to add some shortening so that it will harden. Keep in mind that the candy melt coating will still take some time to dry, so prepare them on a cooling rack to harden. Overall, this recipe turned out fairly well, however, I would also consider using a different recipe in the future due to a few consistency issues. I hope you enjoyed this review and happy new year!
