Salted caramel Mini Pumpkin Cheesecakes!

Happy October! Today I made these cute and sweet Salted Caramel Mini Pumpkin Cheesecakes topped with Roasted Walnuts! I thought it would be perfect for fall and a little dessert to add to your fall menu. I like how easy it was to make them and it also used up the last of my pumpkin puree haha. In total, this recipe made 16 mini cheesecakes and took about 16-18min to bake at 350F. I let them cool for about 20min and then let them chill in the fridge for 2hours before adding the caramel on top. I also opted out of the gingerbread cookie crumbs and used graham cracker crumbs instead, which was simply due to the fact that I didn't have any gingerbread cookies on hand. As for the caramel recipe, there is one linked in the body of the recipe linked below that I used, which worked out well. I also used roasted walnuts instead of roasted pecans, simply because I didn't have any pecans on hand, but it worked out just as well. Overall, I hope you enjoyed this review and have fun baking!

Apple Pie Cookies!

Today I decided to make these super cute Apple Pie Cookies! Not only are they delicious with a cold glass of milk, but they are also on theme for fall. Especially since there have been so many apples at the stores lately with the lack of refrigeration for storing apples in BC. Making these cookies was fairly simple and there weren't many modifications that I needed to make. However, I would recommend adding the caramel sauce or creating a vanilla glaze, if you have time on your hands, as it does add an extra panache to the whole recipe. I also ended up using only five apples, but one of them was quite large, so it was like having two regular-sized apples. This recipe ended up making 18 cookies in total and took 15min to bake at 350F. Overall, I had a lot of fun and happy fall baking :)

Pumpkin Tarts!

Today I decided to make these delicious Pumpkin Tarts! Happy Thanksgiving. These are a classic holiday dessert and I just had to make them for my friends and family. Since this recipe is traditionally a pumpkin pie recipe, I just use tart shells instead and alter the baking time. I ended up making 24 tarts and baked them for 8min at 425F and 7min at 350F. I let them cool for about 15min before serving so that the centres settled. You could also try adding crushed walnuts or serving them with vanilla ice cream or whipped cream for a special topping. Baked Pumpkin Spice Donuts!

Today I decided to make these cute Baked Pumpkin Spice Donuts! I love how fun they were to make and it was great to be able to use the other half of the can of pumpkin I used for the tarts. There weren't many modifications that I had to make, however, I did use pumpkin spice instead of nutmeg simply since I had run out. I also ended up using a mini donut pan instead, as I didn't have a large pan. In total, I made 32 mini donuts in total and they took 12min to bake at 350F. I also let them cool for about 10min before brushing on melted butter to dip in cinnamon sugar. You could also try doing a maple drizzle glaze on top as another alternative. Overall, I had a lot of fun and hope you enjoy making them too. Happy baking :)

Classic Chocolate Chip Cookies!

Today I decided to make these classic Chocolate Chip Cookies! Perfect with a cold glass of milk or hot cup of coffee. I loved how easy and simple these cookies were to make. There weren't many modifications that I had to make, however, you could also change elements of the ingredient list for a different result. For instance, you could swap out the chocolate chips for caramel, add in mint flavouring, use white chocolate chips for half of the chocolate chips or add in raisins or walnuts. The possibilities are endless! In total, this recipe made 24 cookies and took 10min to bake at 375F. I let them cool for about 10-15min before serving and they turned out really well.
