Today I decided to make these super cute and delicious Peanut Butter and Jelly Sandwich Cookies! It all started when I was at Costco and I saw the huge tub of peanut butter there and I instantly thought, 'Let's make some peanut butter cookies!' I haven't made them for awhile, mainly due to the fact that we didn't have enough peanut butter at home to justify making them. However, now that we have so much peanut butter at home, I might just have to make some more peanut butter flavoured desserts such as cupcakes, muffins, and cookies!
One thing that I haven't tried was making peanut butter cookies into a PB&J sandwich, as you may have noticed I try to make a different recipe each time to expand my horizon on baking and for pure interest. After debating between making two slightly different recipes, I settled on 'Chef Savvy's recipe for the peanut butter cookie section, as they looked fluffier and softer, and then I used 'Sweetest Menu's recipe for the peanut butter filling/frosting, as it looked fluffier and smoother than the former.
Something to keep in mind is that the 'Sweetest Menu's recipe for the peanut butter filling produces about twice as much as you actually need, but you can always divide the recipe by two or save it for frosting some peanut butter cupcakes. The cookie recipe ended up making 17 cookies, which created 8 sandwich cookies with 1 leftover cookie. However, I initially thought that they would turn out a lot smaller, so I would say shape them into dough balls half the size of a golf ball, as they will expand significantly once baked in the oven.
In terms of baking time, it took about 15 minutes for the first batch and 12 minutes for the second batch, so anywhere between 12-15 minutes depending on how soft you like your cookies. As for the jam/jelly, I used strawberry jam, however, you can use any of your favourite jams such as raspberry, marmalade, or blueberry. Overall, this recipe turned out really well and I would definitely make them again and they were quite a hit with my family! Hope you all have a great week and happy baking :)
