It's Peanut Butter Jelly time! If you liked last week's blog post, you're going to absolutely love this week's Peanut Butter Jam Thumbprint Cookies with a Peanut Butter White Chocolate Drizzle! These cookies are the perfect afternoon tea dessert or as a late-night snack with a cold glass of milk.
A few modifications I made include excluding the crushed peanuts purely due to the fact that I didn't have any on hand, but I think they would really add something special if you do decide to include this in your version.
Also, I ended up using strawberry jam for each thumbprint, however, I found the jam dissipated while baking in the oven, so I also added about 1/2 tsp of extra jam once I took it out of the oven. In terms of baking time, it really depends on how soft you like your cookies.
If you prefer a softer cookie, I would stick with 12-13 minutes and for a firmer texture bake them for 15 minutes. In addition, while making the drizzle consider adding 1 tbsp of vegetable shortening to the white chocolate chips before adding the peanut butter to create a smoother consistency. In total, this recipe made 20 cookies.
