Pink Velvet Cookies with Cream Cheese Frosting!

Today I decided to make these super cute and delicious Pink Velvet Cookies with Cream Cheese Frosting! Not only are they adorable but they're both easy and fun to make too! One of my favourite parts about this recipe was the colour, as I'm used to making red velvet, but pink velvet is an instant classic. So who knows? Maybe I'll try making another colour next, perhaps purple or blue?


However, I suppose I would have to see if the colour changes once baked, as I know that most of the desserts that I've tried to dye blue tend to change once they're out of the oven. Anyways, there were only a few modifications that I had to make such as baking them for 12 min and the recipe made 11 small/medium sized cookies in total. One of the things that made me slightly hesitant about the result of the cookies was the texture once baked, but fortunately they still turned out great and once you add the frosting all the imperfections are covered!


I also took the liberty to add some pink and heart sprinkles on top for a bit of pizazz, but you can dress it up or down as much as you want depending on the occasion (hence, they are great for Valentine's Day in the future!). As for the cream cheese frosting, I would recommend sifting the icing sugar to create a smoother texture and consistency.
