Today I decided to make these delicious Pumpkin Cookies with Cream Cheese Frosting, just in time for Thanksgiving! Also, these are the perfect fall/winter cookie dessert, especially with pumpkin spice latte season just around the corner. Making these cookies was fairly simple, with only a few modifications along the way.
For instance, I did end up putting them in the refrigerator for about 30 minutes before baking, which I do think helped both enhance the flavours and firm the dough a bit more to form the cookie dough. In terms of baking time, I ended up needing to bake them slightly longer than what was stated in the recipe for a total of 17 minutes at 350F.
However, this could have been because I made the cookies slightly larger than 1tbsp. As for the frosting, it turned out to be the perfect amount in proportion to the number of cookies I made. In total, there were 18 medium/regular-sized pumpkin cookies.
Then to top it all off, I added a sprinkle of pumpkin pie spice on top of each cookie and voila! A delicious pumpkin spice cookie :) As an alternative, you could also add pecans to the batter or even raisins for a different take on the flavour arrangement.
