Viennese Almond Crescent Cookies (Vanillekipferl)!

Today I decided to make these traditional Viennese Christmas cookies as an extra special post for Christmas eve! I've never made them before, but I had seen them around for years and I thought it looked like it was fun to make. After doing a bit of research I found out that the origin of these Almond Crescent Cookies is from Vienna in Austria and are called 'Vanillekipferl', but have also become a baking tradition in places such as Germany, Hungary, Poland, Slovakia, and more! These cookies were not only delicious, but also a lot of fun in terms of shaping them into a crescent moon and of course sprinkling the icing sugar on top. They also reminded me a bit of the Melting Moments cookies also known as 'Russian Tea Cakes', Sand Tarts, 'Mexican Wedding Cakes', and more. Similar to this recipe, you want to make sure you allow enough time to let them cool before icing them (otherwise the icing will melt into the cookie and become 'gummy') or they will break apart if you try to lift them from the tray too early. Another variation I often see made online was where they cookies are dipped in chocolate. So, I decided to test it out for a few of them and drizzled melted chocolate using a sandwich bag and scissors to cut a whole to make them evenly distributed. However, keep in mind that once you cover the cookies in icing sugar the chocolate will roll off the cookies really easily and you may need to add some shortening or put them in the fridge for a bit, so that the coating stays on the cookies.
